One distinction of some possible significance is that, legally, white chocolate doesn’t exist. True chocolate contains pulverized roasted cocoa bean, consisting of cocoa butter and cocoa solids. White chocolate contains no cocoa solids and thus technically is “white confectionery coating.” Beware — some white confectionery coatings don’t even contain cocoa butter. Even in “real” white chocolate the chocolate flavor is subtle at best, being to real chocolate what white soul is to soul. But whatever floats your boat.

This may sound like gatekeeping or pedantry but whatever.
Chocolate is the word for products made from the cacao bean. This for the most part is split into cocoa solids and cocoa butter. Milk and dark chocolate products are made with cocoa solids (along with milk, sugar and other things) but the primary component of flavour that makes it distinct is the cocoa solids. Cocoa butter is the primary component of white “chocolate.” While it does hail from the same plant, the same bean even, it has a distinctly different flavour, almost opposite colour and different consistency. The similarity is just one of origin and says nothing of qualities. Calling derivations of cocoa butter “chocolate” is as helpful as calling weed hemp and an acorn lumber. Only one of the components should have the title “chocolate.”

White chocolate should not be considered a kind of chocolate.
It’s literally just a bar of sugar and milk. It doesn’t even have cocoa in it. It also doesn’t have any definitive differences in taste either like some kinds of chocolates do. There’s nothing special about it that makes it a chocolate. It should instead be called something that has to do with its cream base. I am willing to different points of view on this, as well as any opinions for a new name are welcome.
