Tacro (taco + croissant)

“Tacro” (taco + croissant) is a portmanteau food word that has been trademarked by Vive La Tarte of San Francisco, California. Vive La Tarte announced the “tacro” on December 4, 2017, and started selling it at the Ferry Building on January 19, 2018. It offered three versions:  pulled pork with pineapple, chicken with avocado, and barbecue jackfruit.

On top of tarts and pastry, Vive La Tarte serves more substantial items like avocado toast, muesli bowls, salads, and sandwiches made with their own sourdough. The Ferry Building shop will also serve a new creation: A savory stuffed croissant folded like a taco. For maximum food mash-up portmanteau effect (think cronuts) Vive La Tarte calls that a “tacro.”

If you love croissants and you love tacos (ummm, who doesn’t?) then you’re going to be very excited about San Francisco bakery Vive La Tarte’s new hybrid creation: the Tacro.
The Tacro (a portmanteau for “taco” and “croissant,” which was probably obvious by now) is a croissant shell stuffed with savory fillings and folded like a taco. The savory creation will come in three varieties: chicken and avocado, slow-cooked pulled pork and barbecued jackfruit, so that vegetarians can get in on the tasty fun.

Cronuts — those tasty combinations of croissants and doughnuts — are so 2014. Now, courtesy of Vive La Tarte‘s new stall at the Ferry Building, we have the tacro, a very large, have-a-fork-and-napkins-handy croissant shell bursting with savory fillings.
There are three tacros in all, and they’re big enough to justify the $12 price tag. Choose from chile chicken with avocado, slow-roasted pulled pork and pineapple, or barbecued jackfruit with mango pico de gallo.

The monster taco + croissant hybrid debuted earlier this month at Vive La Tarte bakery in San Francisco, and retails for $12. (Pretty steep for a single tacro, but we hear a single order is pretty filling.)

It’s a flaky croissant shell filled with your choice of three fillings: chile chicken with avocado, pulled pork, and barbecued jackfruit. And it looks GORGEOUS. 😍
Each tacro is topped with sliced radishes and chopped pickled onions, and comes with a green avocado salsa and a red salsa. And according to a Vive La Tarte spokesperson, “[We’ll] likely add a few more flavors down the road, including a potential breakfast version.”

The tacro is a shell made with croissant dough, baked until it’s golden-brown and flaky, then filled with meat, and topped with vegetables and salsa, like a taco.
Vive La Tarte has been experimenting with unique croissant flavors like blood orange and lemon meringue at its SoMa spot for two years. In January they expanded to a second location at the Ferry Building where they debuted the tacro.
Creative director Jimmy Houghton explains that the new item was the result of two months of trial and error.
“We took our regular croissant dough that we make and we tried to fill it with pulled pork or with chicken, and we found that the flavors didn’t combine well. The pastry was way too rich, way too buttery, way too sweet,” says Houghton. “We went back to the drawing board and we said it needs to be saltier, needs to be a bit more savory.”
