West Texas Sunset (cocktail)

The “West Texas Sunset” cocktail is not nearly as popular as the similar “Tequila Sunrise.” Pomegranate juice is used rather than grenadine.

The recipe is not so different from the more familiar Tequila Sunrise—it uses fresh pomegranate juice rather than grenadine.

4 COCKTAILS
2 cups fresh orange juice
3/4 cup (4 jiggers) tequila
Crushed ice
1/2 cup fresh pomegranate juice
3 tablespoons Simple Syrup (see Index), or superfine sugar to taste
Pomegranate seeds, for garnish
 
In a cocktail shaker, combine orange juice, tequila, and ice. Shake well and strain into tall glasses filled with ice. Combine pomegranate juice and simple syrup, and carefully float on top of the cocktail. Garnish with pomegranate seeds.
