Texas Sunshine (citrus-ade)

“Texas Sunshine” is a citrus drink found in the book Cooking Texas Style. The history of the drink (possibly with other names) is not known.

Texas Sunshine gives a taste of that special sun in liquid form. A “citrus-ade” concentrate, it can be made ahead and refrigerated, and it will be ready to mix and serve when needed. (If fresh mint is not available, it can be omitted.)
 
1 1/2 cups sugar
2 1/2 cups water
juice of 6 lemons
juice of 2 oranges
juice of 2 limes
1 cup fresh mint leaves

Texas Sunshine
A refreshing drink for breakfast or anytime!

1 1/2 c Sugar
2 1/2 c Water
6 Lemons—juice of
2 Oranges—juice of
2 Limes—juice of
1 c Fresh mint leaves

In a small saucepan, combine sugar and water and bring to a boil.

Remove from heat and cool. Combine fruit juices and mint leaves.

Pour cooled sugar syrup over juice mixture. Let stand for 1-2 hours.

Strain and refrigerate.

When ready to serve, mix 1 part Texas Sunshine to 2 parts water or club soda. Pour over crushed ice and garnish with fruit or fresh mint leaves.

NOTE: This makes 3 quarts fruit-ade - like lemonade.
