Copeland’s Of New Orleans’ Swamp Pie

Recipe Ingredients
20 oz Graham cracker crumbs
6 oz Chocolate fudge
1/2 x Vanilla ice cream
12 oz Sliced roasted almonds
12 oz Shredded roasted coconut
5 oz Whipped cream
8 oz Butter or margarine
Recipe Instructions
Mix crumbs together with butter or margarine thoroughly. Spread the mixture on sides and bottoms of a 9-inch spring pan to form a crust.
Take 2 ounces of fudge and spread on top of crumbs. Place 1/4 gallon of ice cream on top of fudge. Next, spread 2 ounces of fudge over ice cream then place 4 ounces of coconut. Place remaining ice cream on coconut and follow with 2 ounces fudge, 4 ounces almonds, and 4 ounces coconut as done before.
Top pie with whipped cream and remaining almonds and coconut. Place is deep freezer for 3 to 4 hours..
To Roast Coconut and Almonds: Place coconut on a metal sheet pan and put in oven at 350 degrees for approximately 3 1/2 minutes stirring every 30 seconds. Do the same for almonds but increase time to 4 minutes.

1 quart Baskin-Robbins Shrek’d Out Chocolate Mint ice cream
Pre-made chocolate-cookie crust in pie pan
1 tub thawed whipped topping (8 ounces)
1 bottle green food coloring
1 bottle yellow food coloring
1 pack gummy worms, snakes and frogs
1 green gel tubeSet the Baskin-Robbins Shrek’d Out Chocolate Mint ice cream on the counter for 5 minutes to soften, then empty the ice cream onto the chocolate-cookie crust, smoothing to fill entire pan.
Place swamp pie in freezer for 15-20 minutes. Mix the whipped topping and green and yellow food colorings together until you reach your desired swamp color.
Cover the ice cream with a thick layer of the whipped topping.
Place swamp pie in the freezer for 15-20 minutes to set.
Decorate the swamp pie with your gummy worms, snakes, frogs and drizzle with the green gel. Return to freezer or serve immediately.
Makes 8 servings.
Nutrition information per serving: 469 calories, 6 grams protein, 29 grams fat, 47 grams carbohydrate, 1 gram fiber, 71 milligrams cholesterol, 223 milligrams sodium.

Louisiana Swamp Pie
4 eggs
2 cups sugar
2 sticks butter, melted
1 teaspoon cider vinegar
1 cup coconut
2 teaspoons vanilla
1 cup chopped pecans
1 cup golden raisins
2 uncooked pie shells
Preheat oven to 300 degrees. Beat eggs. Add sugar, melted butter, vinegar and vanilla, mix well.
Add coconut, pecans and raisins. Pour into pie shells, dividing mixture evenly between both shells. Bake for 50-55 minutes or until toothpick comes out clean. Makes 2 pies, serves 6-8 people a pie.
