South of the Border Cider

South of the Border Cider contains apple cider and tequila. The drink is on Central Market’s website and Emeril’s website and is mentioned in a 1990 book, but doesn’t appear in too many other places.

5 cups apple cider
1/4 cup fresh lemon juice
1/2 teaspoon salt
1 2/3 cups tequila
1/3 cup orange-flavored liqueur
8 lemon slices for garnish
 
In a saucepan, combine the cider, lemon juice and salt. Bring the mixture to a simmer and skim it. Add the tequila and liqueur and heat the mixture over moderate heat, stirring until it is hot. Divide the mixture among 8 heated mugs and garnish each drink with a lemon slice.

SOUTH OF THE BORDER CIDER

Ingredients needed:
5 cups apple cider
One-fourth cup fresh lemon juice
One-half teaspoon salt
One and two-thirds cups tequila
One-half cup orange flavored liqueur
8 lemon slices for garnish

Combine the cider, lemon juice and salt in a 3-quart saucepan. Bring to a gentle simmer and skim the foam that rises to the surface. Add the tequila and orange liqueur and heat the mixture, stirring over medium heat until hot, but do not boil. Pour equal amounts of the mixture into 8 heated mugs, garnish each with a slice of lemon and serve.
