“Slow walk” (“low and slow” barbecue)

The Original Texas Barbecue King in downtown Los Angeles, California advertises:
 
Barbecue King started out as the brainchild of Rod Daniels, using many of the recipes handed down to him by his mother, Lois Daniels. It was her Texas background and special family recipes that provided the basis for all of the food we make and the way we “slow walk” our meat. We take pride in preparing and serving such food to our customers.
   
This appears to be the same process that is also called “low and slow” barbecue. The term “slow walk” does not appear to be used by other barbecue restaurants.

Starting out as a catering business from home, Rod opened Barbecue King at the corner of Sunset and Figueroa Boulevards in December 1994. Ten years later, Barbecue King is still serving its delicious barbecue to longtime customers, while adding new ones every day.
