Putting Green (a bed of parsley)
A “putting green” is a bed of parsley, tightly packed like a golf putting green. The turn-in boxes at barbecue competitions feature “putting greens,” some with shredded lettuce among the parsley. “Putting green” has been cited in print since at least 2008, when it was discussed in The BBQ Brethren Forums.

As a certified judge, some of the turn-in boxes look wonderful. Do you place a layer of shredded lettuce below the parsley or just a layer of parsley to form the putting green? Just wondering how everyone makes a wonderful turn-in boxes. 😛

No Shredded Lettuce, but a ton of parsley packed tightly….

I use shredded lerruce as a bed and then stick the parsly legs in the lettuce.

Thighs should be of same shape and size. The bed of parsley should be TIGHT like a putting green affect so the meat can be SHOWCASED instead of ENCASED in parsley.

Making parsley turn in boxes or “the putting green” as it is commonly referred to as is time consuming to say the least. First you have to find parsley no easy task sometimes. You need to find parsley that is all the same shade of green – and that looks alike. You may decide to do a combo lettuce and parsley box or straight up lettuce the choice is yours! I personally do parsley boxes 100% of the time.
