Mexi-Skins (potato skins)

“Mexi-Skins” is a Tex-Mex dish of potato skins with cheese and perhaps jalapeños or salsa or sour cream added. Various recipes differ. The exact origin of the dish is unknown, but it was probably invented in the 1980s or 1990s.
