I have found that massaging kale (AKA: the angry lettuce) with lemon juice and a little sea salt make it much more tender and flavorful. And who can blame it. We all could use a little massage to soften our attitude every now and then.

To some, kale is “angry lettuce” that needs to be TAMED.
Even though kale is among the most nutrient DENSE dark leafy greens, it tends to be a tad chewy, tough and BITTER. However, one of the best methods of “taming” kale is to MASSAGE it with lemon or lime juice along with avocado or hummus.
By “massaging” kale with lemon juice, the cell walls are disrupted which not only UNLOCKS more nutrition but softens its texture as well, making it much easier on our taste buds.

Kale is chewy and bitter to some. Tear it to pieces, sprinkle it with fresh lemon juice and nutritional yeast. Now get your hands into it and massage the kale ‘til every piece is coated. Let it rest and then dive in. Remember as Rip Esselstyn said, “Kale is just angry lettuce.”

Kale has been called the angry lettuce, because is it much more fibrous and less delicate than say baby spinach, romaine, or other leafy greens. But, this Massaged Kale Salad demonstrates an awesome trick to calming it down with lemon juice and salt. We add yummy raisins, sesame seeds, and dried cranberries too.

Kale is nicknamed “angry lettuce” for a reason. I had to steam mine for 10 minutes today until it was chewy enough to eat. Eating green leafy vegetables is a permanent habit.

The line I’ve heard is “if you put enough oil on your kale, it’s easier to scrape off the plate straight into the bin” 😂 I’ve also heard it called angry lettuce. In either case, nope. 🤢

I’ve heard it said that kale is angry lettuce - it has to be roughed up before added to a salad. I do love it sautéed with egg, topped with a bit of salsa for breakfast, also great in smoothies. 🤷♀️
