Home of the Original Elgin Hot Sausage
We have been making our famous Elgin Hot Sausage for over 123 years right here at Southside Market and BBQ, Inc.® in Elgin, Texas. Part of what makes “Elgin Hot Guts,” as the old timers call it, different from other sausages in the area is the seasoning and the quality of fresh ingredients. And, it comes in only one flavor - hot. Don’t let that scare you, though, we lightened up on the pepper back in the 1970’s so that everyone would be able to enjoy it. For those who still like the original, we took the extra pepper and put it into our authentic Elgin Hot Sauce.

Our second stop was in Elgin, a railroad town that was established in 1872. Ten years later, Southside Market and Barbecue, famous for its “Elgin Hot Sausage”, was established. In 1968, Ernest Bracewell bought the place. He, his son, Billy, and grandson, Bryan, have carried on the sausage-making tradition that has spanned generations of Texans.
Southside Market and BBQ houses a meat market, a barbecue restaurant and a sausage production plant where it produces sausage that locals refer to as “hot guts.” The 22,000-square-foot facility was built in 1992, the same year the Texas Legislature proclaimed Elgin the Sausage Capital of Texas.
Over the years, Southside Market and BBQ survived ownership changes, expansion, a location move, and even a 1983 fire that gutted the dining room at the old downtown location. One thing has remained constant – famous Elgin Hot Sausage. Director of Marketing Rachel Bracewell said the sausage recipe has basically been the same since 1882. “We haven’t tinkered with the original recipe,” she said.

This month’s issue of Texas Monthly describes Dr. Phil’s increasingly unwelcome public makeover of the town of Elgin. It seems he doesn’t approve of the menus (among other things) in the “Sausage Capital of Texas.” We decided to take a break from our DFW barbecue search to return to Elgin while the legendary “hot guts” are still in fashion. In addition to Elgin’s Southside Market, Meyer’s, and Cross-town Bar-B-Que, we hit Mueller’s on the way back through Taylor.

JETTON ALSO suggests what he calls “adds-on” to the basic LBJ menu, although he notes that Mr. Johnson refers to them as snacks beforehand. One is East Texas Hot Guts, “a sausage made down in President Johnson’s part of the country.”
It’s a beef and pork combination, “country seasoned” with plenty of salt, red pepper, black pepper and rubbed sage. “You fool around with these until you taste something you like and then it is your secret for life.”
