Chilada (chili + enchilada/tostada, or -chilada)

The Texas fast food restaurant chains of Taco Bueno and Taco Casa both serve a “chilada.” The name might be derived from “chili” and either “enchilada” or “tostada,” or simply from a clipped form of the word “enchilada.” Taco Bueno trademarked “Bueno Chilada” (not simply the word “chilada”) with June 30, 1981 as the date of first use in commerce.

The two “chilada” restaurants use ground beef (although chicken may be substituted), chili sauce (Taco Bueno) or mild red sauce (Taco Casa), melted queso (Taco Bueno) or cheddar cheese (Taco Casa), and black olives (Taco Casa). Taco Bueno’s Bueno Chilada Platter also contains rice, beans, sour cream, guacamole and chips.

Taco Bueno’s Wholotta Platter ($6.59) turned out to be more food than humans should be allowed to eat in one sitting, or maybe even two sittings, including a crispy beef taco; a “Chilada,” Taco Bueno’s version of an enchilada, a slightly rubbery flour tortilla wrapped around ground beef (a chicken version is also available) and lightly coated with a layer of queso and chili;...
