Chicken Fried Salmon
Texas is known for its chicken fried steak, but does anyone really make chicken fried salmon? There appears to be at least one recipe on the internet for “Cayenne Chicken-Fried Salmon.”
A May 26, 2008 “Texas Road Trip” post (below) indicates that the Sands Restaurant in Dalhart serves “CFS, CFS (salmon).” A check of the Sands Restaurant’s online menu shows that it’s famous for its chicken fried steak, but salmon is nowhere listed. Perhaps salmon is a new kind of “CFS”?

Cayenne Chicken-fried Salmon
Ingredient Brand/Description Quantity
Salmon fillet Skinned and pinned 8 oz. portions
Breading Fine bread crumbs 1 C
Table salt 1 t
Cayenne pepper powder 1 t
White or black pepper ½ t
Egg wash Whole eggs 2 ea
Water 2 T
Sugar 1 T
Olive oil ¼ C
Instructions
1. Dip the salmon in the egg wash and set it aside (on a bread rack) for a few minutes.
2. Place a large cast iron skillet (or equivalent) in a 550 degree oven until it is very hot.
3. Pour the olive oil in the skillet and swoosh it around so that it covers the bottom completely.
4. Generously bread the salmon pieces and place them directly in the skillet.
5. Allow them to bake/fry for about three minutes before turning them over.
6. Another 3-4 minutes will complete the process.

Sands Restaurant, 314 Liberal - Real good place if you’re ever lost in Dalhart. CFS, CFS (salmon), Steaks, fried chicken, real gravy…I’m getting fat just writing this! They have a motel there if you need to sleep off all the great fried foods they have.
