Bull Dozers or Bulldozers (similar to Southwestern Eggrolls)
“Bull Dozers” are similar to Chili’s popular Southwestern Eggrolls and were developed about the same time in the 1990s. San Antonio’s Bullpeppers Olde Town Cafe opened in 1999 and offered Bull Dozers—homemade egg rolls with smoked chicken, bacon and roasted corn. (Chili’s “Southwestern Eggrolls” do not contain bacon.)
Bullpeppers is no longer in business, but the appetizer is still remembered by some.

If you look at the menu, (http://www.bullpeppers.com) you’ll see that someone had way too much fun naming the dishes. Also, a great deal of creativity went into the food. I’ve never seen so diverse a menu in S.A.
Our first dish was an appetizer of the Bull Dozers. These are egg rolls (yes) filled with smoked chicken, bacon, roasted corn and black beans (~$4.00). I predict these will become legendary in S.A. I expected them wrapped in a fried tortilla but they really are in egg roll wrappers. There is a smoked honey dijon dip that is a lot better than I expected. The smokiness covers the honey just enough.

Here’s the Bulldozers
(thanks to Jerry Jungmann & Bull Pepper’s rest. in San Antonio)
Smoked chicken, black beans, roasted corn, some crisp fried bacon, sauteed or roasted chopped poblanos, bell peppers and onions, garlic, chili powder, comino, salt, chopped cilantro and shredded cheddar. Use eggroll directions on package to assemble and fry.
The dipping sauce - equal amounts of buttermilk to mayo - mix with dijon, honey, garlic, salt, pepper, sugar, onion powder and liquid mesquite smoke.
