Black and Bleu Salad
“Black and Bleu Salad” became popular in the 2000s at chain restaurants such as O’Charley’s, Beef ‘O’ Brady’s and Quiznos. The salad often contains sliced sirloin steak, but can have blackened chicken or salmon instead. This is placed over a salad that contains crumbled bleau cheese and sometimes bleu cheese dressing. “Black and Bleu Caesar Salad” is simply steak added to a Caesar salad.
It’s not known which restaurant establishment served the first “Black and Bleu Salad.”

Salad
1 porterhouse steak, cut off the bone and into thick slices (or anything else)
1 shiitaki mushroom, sliced 1/4 inch think
1 (10 ounce) bag european mixed greens
1/2 small red onion, sliced into rings and then into 1/4 s
1 (11 ounce) can mandarin orange sections, drained
blue cheese, to top (I like Gorgonzola)

Combine vegtables and toss. Spread the blackened chicken on top and sprinkle with crumbled Bleu Cheese. Serve with Bleu Cheese dressing or a dressing of your choice. Enjoy!

Quizno’s Black & Bleu
Ok, I’m officially addicted to the Quizno’s Black and Bleu salad. I want to make it at home for friends and family but have a few problems.
Most of the ingredients are easy enough, quality steak, some romaine lettuce, large diced tomatoes, bleu cheese crumbles and red onion. What I’m having issues with is the balsamic vinaigrette dressing and the flatbread.
I believe they are lightly buttering the flatbread on one with a melted garlic butter mix and then adding some seasoning on top before warming. I can’t seem to determine what the seasoning it exactly. Whatever it is, I believe they are roasting the spices beforehand since they all seem very dark and aromatic.
Secondly, and most importantly, is the balsamic vinaigrette. It’s unlike what I’ve been able to produce. Does anyone know of a presold similar mix or have any clue as to what they are adding to make their final version?

This is a favorite at a local restaurant I used to work at named Elijah’s here in Wilmington. All of the topping measurements are approximate, put as many or as few as you want! The spicyness of the blackening spice and the potent cheese are wonderous with the sweet balsamic dressing. The original salad at the restaurant also includes cherry tomatoes, but since neither I or my boyfriend care for raw tomatoes we left them off!
