Jalapiña (drink)

"Jala-Piña Cocktail” is cited from at least 2006 and usually contains a pineapple, silver tequila, fresh lime juice, sugar, a small jalapeño, ice and pineapple wedges.

Juicebox in Austin, TX, has a non-alcoholic “jalapiña” drink of pineapple, jalapeño and lime—without the tequila.

my current favourite - Jala-Piña from a nearby Mexican place.
tequila, pineapple with jalapeño. i’m usually not fond of pineapple based drinks, but the jalapeño adds an interesting touch. not very sweet either.

Slice the jalapenos and combine with the tequila in a mason jar or swivel-top bottle. Let it steep for 3 days.
To make one cocktail, combine 3 oz. tequila, 2 oz. pineapple juice and 3 dashes of bitters in a cocktail shaker filled with ice. Shake well and pour in a martini glass.
