Beeramisu (beer + tiramisu)

Tiramisu is the popular Italian dessert made of biscuits dipped in coffee, with layers of egg yolks and mascarpone. “Beeramisu” dips the biscuits in beer instead of coffee.

The dessert “beeramisu” has been cited in print since at least 1997.

Round Two, served after pints of ice water: Hand-made Old Foghorn ice cream with a Maple/Salvator sauce, served in a pastry cup (I was not nuts about this, the cold made the bitterness overpowering), ‘Beeramisu’ made with Chimay Grande Reserve (this was grand: moist, rich, complex tiramisu knockoff, liked this better!), and Chocolate Mousse made with Stille Nacht (good mousse, but I didn’t get a lot of Stille Nacht in it).

Paul’s Beeramisu recipe calls for ladyfinger cookies to be bathed in a deep, rich porter beer mixture that has been blended with strong coffee. Not a Budweiser can in sight. It takes its cue from its traditional cousin by utilizing creamy mascarpone cheese sweetened with a bit of sugar as the foundation.

I made a few minor tweaks to Paul’s version. I did individual servings instead of a big family-style version and I used Italian ladyfingers called savoiardi, they are harder and don’t go to mush when you dunk them in the coffee bath.

This take on Tiramisu strays pretty far from the traditional. It calls for Guinness and Irish Cream instead of coffee and Marsala, but the requisite creamy, soft layers will surely please anyone crazy for this Italian dessert.

1 pound mascarpone, softened
3/4 cup granulated sugar
3/4 cup heavy whipping cream
1/2 cup plus 2 tablespoons plus 1/2 cup Irish Cream such as Bailey’s or Carolan’s, divided
8 ounces Guinness
36 savoiardi (Italian ladyfingers)
Small bar good-quality chocolate, for shaving

COMMENTS
Good idea, but there are so many other great stouts out there rather than Guinness. I scratch my head whenever I see a recipe with Guinness anything in the title. There are some excellent stouts that even contain coffee and/or chocolate.
