The Kerbey Lane Cafe in Austin (several locations, originally on Kerbey Lane) is a popular place to eat breakfast (available 24 hours). An inventively named favorite on the breakfast menu is the “Paris Texas Platter”— migas (eggs with tortilla crumbles) and French toast. The dish also comes with queso (optional).
Migas (pronounced [ˈmiɣas]) are a traditional dish in Spanish cuisine and Portuguese cuisine. Originally eaten as a breakfast that made use of leftover bread or tortillas, today migas are a fashionable first course served for lunch and dinner in restaurants in Spain. Some historical sources associate the origins of this dish to North African Couscous.
In Texas, migas (also known as migajas) is a traditional breakfast dish in Tex-Mex cuisine. Originally eaten during Lent, the meatless version consists of egg scrambled and sauteed together in butter or oil with torn strips of corn tortillas, diced onions, sliced chile peppers, diced fresh tomatoes, and cheese, plus various spices and condiments (e.g. salsa, pico de gallo). Migas are typically served with refried beans, and corn or flour tortillas are used to enfold all of the ingredients into tacos.
A meaty version is also served, using the same ingredients as before, but adding a spicy chorizo to the mix. (The tortilla strips can also be deep-fried until crunchy.)
Wikipedia: French toast
French toast (often known as eggy bread in most of the UK - the exception being Scotland and Northern Ireland, pain perdu in French, pain doré in French-speaking parts of Canada) is a popular breakfast food in North America and Europe. It is also popular for breakfast and afternoon tea in Chinese world centred in Hong Kong.
French toast is made with bread and eggs; some common additions are milk, water, or orange juice to thin the eggs, sugar, and spices such as allspice, nutmeg and cinnamon. Vanilla may also be added to the egg mixture. In restaurants throughout Canada and the United States, the bread is usually thick white bread made especially for use in French toast; when made at home, regular sliced bread is often used. Although often served as a sweetly spiced dish in the United States, others prefer a savory version, seasoned with salt and pepper instead, or even topped with a melted slice of cheese.

Migas and French Toast. Getting the migas with queso is a must. The queso is pretty much the reason I get the dish. My only complaint is that they often put way too much cinnamon on the french toast.
