Guy Fieri, a restaurateur and Food Network personality, opened Guy’s American Kitchen & Bar (220 West 44th Street, between Seventh and Eighth Avenues) in New York City in the fall of 2012. The menu described “Donkey Sauce”—mayonnaise, garlic, yellow mustard, Worcestershire sauce, salt and pepper. The name “donkey sauce” was not explained, but it could be that Fieri thought the sauce was “kicking” (like a donkey’s kick). “Donkey sauce” had been infrequently cited in print before 2012 and did not have a standardized recipe.
Fieri’s “donkey sauce” is similar to mustard aioli; a December 2012 restaurant review described the sauce as “just glorified mayonnaise with a special name.”

1 cup prepared mayonnaise
1/4 cup roasted garlic
1 teaspoon regular yellow mustard
4 dashes Worcestershire sauce
1/4 teaspoon kosher salt
4 pinches ground black pepper
Mix the mayonnaise, roasted garlic, mustard, Worcestershire, salt and pepper together until smooth. Yield: about 1 cup.

Donkey Sauce – it’s been in the news lately. A potent name, certainly memorable. It simply tastes like a nice rustic version of Alioli, that’s lost it’s overly aggressive pungent punch. The garlic is mellowed by roasting, or a quick confit in olive oil as I’ve done here. Use it with almost anything that comes off the grill. Especially good on hamburgers.

1 cup mayo (homemade is best)
2 heads garlic, roasted
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Sriracha sauce (optional)
Pinch of kosher salt and pepper
