Cruffin (croissant + muffin)

Mr Holmes Bakehouse, of San Francisco, California, opened in November 2014 and popularized the “cruffin” (croissant + muffin). National news stories about the “cruffin” were written in March and April 2015.
 
“Cruffin” and “mumpet” (crumpet and muffin) were mentioned in the book The Lady Paramount (1902) by Henry Harland. A trademark application for “Pepperidge Farm Cruffins” was filed in 1993. “Cruffins - The leftover crumbs from a muffin” was cited on Twitter on October 23, 2009. “Cranberry muffins(cruffins)” was cited on Twitter on May 26, 2012.
 
Similar food names include “cronut” (croissant + donut) and “duffin” (donut + muffin).

SAN FRANCISCO — It takes three days to make a cruffin, a muffin-croissant hybrid that is the signature of Ry Stephen, a 28-year-old pastry chef. His shop, Mr Holmes Bakehouse, has been open three months and inspired a wild following, with customers lining up early to buy the ice-cream-cone-shaped cruffins, which reliably sell out before the line is gone.
 
“It creates its own frenzy,” said Rebecca Flint Marx, editor of San Francisco Magazine’s food section, who noted that not only are cruffins a cult item — and at $4.50, relatively affordable — but they are also camera-ready, as photos on Instagram attest. Fillings include caramel, strawberry milkshake or Fluffernutter cream (among other flavors), depending on Mr. Stephen’s mood.

That’s because the muffin in question isn’t exactly a muffin—it’s a cruffin—and because demand for the things at Mr. Holmes Bakehouse has been so great since its debut that owners have limited sales to just two per customer, so as not to disappoint their growing fan base.
 
You’d think they were selling Led Zeppelin reunion tickets.
 
“It’s a myth of a pastry, it’s the unicorn of pastries,” says Ry Stephen, 28, Mr. Holmes Bakehouse co-owner and pastry chef.

Breathtaking, right? Just a glance at these golden, flakey, buttery rounds of pastry is enough to make us not groan at the mention of yet another Cronut knock-off. There have been so many. Between the Cro-Nots, Doissants and Brioughnuts, the morning pastry hybrids were starting to get a bad name for themselves.
 
But the cruffin—basically a muffin made with croissant dough—has been in a league of its own ever since it was created in the SF bakery Mr. Holmes Bakehouse. Lines formed for a taste. Burglars broke laws to steal the recipe. This thing is all-around known to be awesome. Almost worth a trip to San Francisco for a taste.
 
Then the brilliant mind behind Lady And Pups created a cruffin recipe that’s feasible to make at home.
